Yesterday morning I received my weekly delivery of milk and meat from Farmers Direct. I'm really enjoying this, and then on Thursday my fruit and veggies arrive. I don't get too much, but what I've ordered seems to be almost right, so that's good.
To use up some stuff in the fridge, I thought I'd make a slow cooker hotpot for dinner. So in went some large chunks of chicken thigh fillet, chunky diced carrots, onions, potatoes, parsnips, swedes, and a couple of cloves of garlic. Then about 4 litres of chicken stock. Sound a bit like soup? It should cos it was actually a veggie soup pack from Woolies. I had basically made chicken soup but it was very very chunky and not soup-like at all.
After it had cooked for 8 hours, it smelled great but looked strange, like overly chunky chicken and veggie soup. So I threw in half a packet of risoni and waited...to my amazement, it worked and all of a sudden we had an edible meal! And healthy too! No added oil and easy to make. Still looks a bit odd, but tasted good :)
